Comment: There’s a bar up in Wausau called @hoehnshuddle. Hoehn’s Huddle has lake perch on Fridays. Hoehn’s Huddle proudly points out their lake perch is real freshwater yellow perch (no imposters allowed). Hoehn’s Huddle has an option to order 3/4 of a pound of their real freshwater yellow perch. I like Hoehn’s Huddle…a lot.
I was rolling solo this Friday night so I huddled up with a few strangers at the bar and kicked things off with a stiff, but savory Old Fashioned. HH wasn’t slammed when I arrived, but a steady stream of followers flowed into the cozy confines not long after I settled in, and by the time I left it was standing room only. My perch took a solid 20-30 minutes to emerge from the kitchen as a ton of dine-in and to-go orders beat me to the punch, but the time flew by.
The picturesque perch plate was placed before me, shining as though it was crafted by the hands of some divine frying god. Upwards of 10 fat, golden-fried, freshwater fillets overflowed the plate and looked simply mouthwatering. Each delicate morsel was seemingly more supple and succulent than the canoe-shaped critter that proceeded it. I was happier than a pig in you-know-what, and crushed all 12 ounces without flinching. It didn’t hurt the Hoehn’s has a perfectly potent tartar that complements the sweet meat of the perch and truly takes things over the top.
A nice supply of crispy battered fries provided a welcome textural shift as did the cup of tangy slaw. Finishing off the drive was a full slice of marble rye that, like the fish, is as traditional as they come and an absolute requirement for Fish Fry purists.
When we arrived in Wausau I had already made other dinner plans and when those fell through I was honestly slightly relieved. I knew what was in store for me at the Huddle and pivoting to the 3/4 pound of perch was a no-brainer. Overall, we highly recommend this Fish Fry and will probably have a hard time convincing ourselves to give anywhere else in Wausau a shot.hoehnshuddlebarandgrill.com/
